David Bouley has more restaurant concepts up his sleeve than Heidi Montag has cosmetic-surgery appointments, and with By the Ounce he's created another intriguing dining experience. After 6 p.m., the first floor area of Bouley Market that's usually reserved for consuming the shop's takeout cuisine morphs into a wine bar serving a selection of impressive vintages and small plates, all priced "by the ounce." So whether you're looking for an ounce (or 10) of an exceptional French red or a Pinot Noir from Oregon (selected by sommelier Andr Compeyre); or fois gras, cavier and Serrano ham to accompany your pour, you'll pay by the ounce. Don't confuse this with a midtown Indian lunch buffet--prices can get a bit steep--but we're certainly curious whether this measured concept can make the leap to the fine dining scene.
