Instead of retiring to his native Lyon in a castle built from limestone, foie gras and stacks of his gushing American reviews, celebrated chef Daniel Boulud enters what historians may later call his "late Boulud" period with the opening of an exceptional restaurant on the Upper West Side. Billed as a wine bar and bistro, the sophisticated Bar Boulud is so much more. The space (across from Lincoln Centerguess the demographic) is an elegant and contemporary take on a rustic country wine cellar, with a vaulted ceiling, white oak and a central communal table. The main draw, both culinary and atmospherically, is Gilles Verot's Parisian charcuteriecognac-tinged Pate Grand-Mere, shredded slow-braised beef cheeks, provencal pulled rabbit, pheasant-duck-and-partridge "en croute." It's all heavenly and overwhelming, especially when the raw ingredients are on display right there at the Burgundy-filled bar.
