For diners who believe stoves and ovens are overhyped, Quintessence in the East Village is a welcome sight. In the raw food business since 1999, owner Tolentin Chan and Raw Chef Dan (yes, that's his moniker), deliver exquisite presentation of products without the heat treatment. The menu is understandably heavy on salads and pureed soups, but what's surprising is how inventive they can be in recreating burritos, pizza, burgers and desserts. The place is tiny - it's the vestiges of Raw Chef Dan's former studio apartment - but service is attentive and super knowledgeable, and patrons needn't make a lifelong commitment to raw dieting to enjoy. One meal at a time will do.
