The brave souls behind Union Square's Dogmatic Gourmet Sausage System aren't letting a little dicey tube-steak history stand in their way: The spot that once housed dearly departed Mandler's has been commandeered by a completely new team and, after a minimalist modern face-lift, is now serving a new breed of links. Dogmatic began its fashion-forward sausage peddling at a Bleecker Street cart, and the Union Squre spot marks its first brick-and-mortar location. Choose from a list of five wursts (okay, four wursts and one asparagus, "the sausage of the vegetable kingdom"), then add an innovative sauce like sun-dried-tomato feta or truffle gruyere. Fruity handmade sodas are mixed on site from organic fruit puree and carbonated water. The refreshing sorbicles (a convenient sorbet-meets-popsicle hybrid) will hit the spot after indulging in a gluttonous sausage-smorgasbord.
