The folks behind Quinto Quarto Osteria Romana owe a debt to Mario Batali, David Chang, Ryan Skeen and the other great chefs who have opened our eyes (and palates) to the beauty of the nasty bits these past few years. Without those trailblazers, a restaurant whose name refers to the offal of butchered animals (quinto quarto means fifth quarterthe leftover organs) would be about as welcome in New York as a shop exclusively selling Red Sox jerseys. But this spinoff of a traditional Roman restaurant has arrived at the perfect time, when adventurous diners will embrace the chance to sample the kitchen's traditionally prepared tripe and oxtail stew. But since not everyone is on a mission to recreate episodes of Bourdain's "No Reservations, there are still plenty of innard-less options like spaghetti carbonara and sliced steak. Still, we can't help thinking: why not try something outside of your comfort zone? It might not be as "offal" as you think
