But the Italians, staunch-defenders of pizza's birthright, take things to another level. In order to certify an authentic Neapolitan pie, you first have to get past the Associazone Pizzaiouli Napoletana, which has given new West Village casual pizza joint Keste Pizza & Vino their blessing . Now it's time for New Yorkers to judge owner Roberto Caporuscio's output by their own standards. Even though Caporuscio cut his teeth in the cutthroat New Jersey pizza scene, he'll now be putting his traditional thin crust pies (margherita, sausage and rappini) up against a slew of nearby favorites like John's and Arturo's. With plans to open an intensive pizza school downstairs from Keste, it may not be long before Roberto and company are turning out their own future competition; maybe not the best business model, but certainly a welcome development for NYC pizza lovers.
