2011 opened with Italian restaurants under siege, following old guard Pino Luongo's red-sauce rampage. But that won't stop Bobby Werhane (Choptank) from inviting Loungo over to his new Italian spot, Spassowhich ironically opened the week Luongo went apeshit. "We would absolutely love to have [Luongo] come and dine with us," he says. "The unfortunate thing is that people get typecast into, We're doing traditional Italian cooking. We're not in Italy. What we're saying is that these are our rustic Italian-inspired osteria dishes." [Ed: check out our Tumblr page for more on this.] So what would Werhane offer the persnickety Luongo? Their house-cured meats (which include prosciutto and coppa), maccheroni with pork ragu and goat cheese, and a saltimbocca made with trout. They're part of a tight, straightforward menu from exec chef (and Convivio vet) Craig Wallen. Werhane, who helped open Dell'anima and L'Artusi, stresses the "osteria" nature of Spassoaka a casual, versatile joint equally suited to hearty noshing as it is to just chilling with a glass of their house white, a Riesling that will be available on tap.
