My name is Fabio, I cook, I create for you, chef Fabio Hakill recently doted. Hes used to cooking off the cuff because diplomats from the surrounding United Nation consulates come in with special dietary requests. But rather than change a dish, Fabio will simply make whatever you want. People say, I know Im in an Italian restaurant, but I dont want pasta. Hakill says. So I ask, What you feeling to eat? Whatever the response, he keeps a stock of fresh ingredients at the ready in the back, like whole wheat pasta, seasonal seafood and vegetables. Now thats a concept: a dish built around the ingredients you like (not hate). But with reliable Italian classics like fried calamari ($12), lobster ravioli ($20) and sea bass ($30), heading off the menu may not be necessary.
