While you're unlikely to see anyone except the uber-hip wearing a Trilby in the Cooper Square Hotel's new restaurant, plenty of people will be drinking one. In the clothing world, it's a short-brimmed fedorapopular among Brits, not to mention Justin Timberlake wannabes. In this room (which takes over the old Faustina space), it's a potent cocktail made with Scotch, vermouth and Parfait Amour (please, don't try to wear that). There is a bustling bar area if you want to stand and mingle, or you can sit with the scenesters in the back room that's set up like a fashionable lounge. There is a menu of affordable gastro-pub cuisinelook for a meaty steak tartare or some tasty short rib sliders with slaw. Who knows? After a night in this spot, you might feel inspired to go shopping for some posh headgear the next day.
