Oh, the drama! Before it could even serve its first entre, this embattled and long-delayed LES eatery has been the nexus of a highly publicized shakedown that booted out one of its original partners, ex-model/promoter Emma Cleary. (Cue the inevitable lawsuit.) Which has totally overshadowed one key thing: the friggin' food! Says chef Brian Bieler (Upstairs at Bouley), "I really made it a point to [the investors] that I'm focused on my food, and don't bother me with any of this other crap. I shut the door in the kitchen and said, 'Come get me when you're done.'" They're ready to get him now: Bieler has crafted a seasonal American menu that sticks to ingredients sourced from the Northeast. Slow-roasted chicken is plated with Yukon Gold potatoes and baby fennel, while a simple tomato coulis of fleur de sel, olive oil and basil reflects Bieler's mantra to keep "everything super simple. You're not gonna find seven different flavor combinations going on in my plates."
