Chinese-American restaurateur Wally Chin has known chef Chris Cheung (Monkey Bar) for over 20 years, going way back to their early Chinatown days. ("He was playing basketball and I'd seen him a couple of times, and we became friends!" says Chin.) He's understandably excited that they're now working side by side at Walle, Chin's long-delayed midtown restaurant where Cheung is the exec chef. The food here brings together American and Asian influences with cross-cultural culinary flair. That translates into a burger served on a scallion bun with ginger-garlic sauce, fish and chips with black bean sauce, and an elevated fried-rice dish tossed with short rib. "I always wanted to put a spin on the spices that we have with American cooking," Chin says. Mission accomplished!
