For years, it has seemed, Locanda Verde chef-owner Andrew Carmellinihas been itching to break from the Italian roots that have brought him much fame (opening A Voce to raves) and fortune (see Locanda's wait for a reservation). He even served an American-style fried-chicken dinner in the private room of his Tribeca cicchetti house. With The Dutch, a certified-American spot in the Roman and Williams-ized Cub Room space, Carmellini finally scratches that itch with a duo of well-considered menus (supper and late-night). Make no mistakethe dishes are hardly the classics served at your local Ground Round. America is an ethnically diverse place, as seen in a braised lamb neck served in a rich mole and a harimasa appetizer (with daikon and soy). Rabbit pot pie and that famous fried chicken ($19; served with slaw, collards and mashed potatoes with honey butter) lean more John Wayne. A fried oyster sandwich and "Asian whiteboy ribs" are available after 11 p.m., as well as Mexican-styled tripe. Talk about baiting the chef/industry crowd with that one. The kitchen has been equipped with a Southern Pride smoker, which teases at an obvious next step: barbecue.
