It's been a while since we heard a Michael Bao punwe were starting to get withdrawal symptoms. Here to the rescue with the meds: Baotique! Billed as a modern Vietnamese spot, this 66-seater is located inside swanky midtown lounge Covet and is an eclectic little eye-popper, filled with alligator walls, carved wooden murals and steel touches. The food is vintage Bao: Vietnamese staples like bo luc lac (marinated and seared beef), bun noodles and Dungeness crab, but punched up with fancy flair: That duck fried rice, for example, also comes with foie gras. Pichet Ong is onboard to do desserts, and Huynh says the sweet offering will include a "chocolate green tea volcano." But the big "waaaa?" dish here is the Spam fried rice. Huynh notes the dish will come with five types of pork: Spam (yep, from the can), pulled pork, Chinese sausage, pork fat and bacon. I love Spam," he says. Everything pork. Pork! Pork! Pork! Pork!
