Kaiseki is a traditional multi-course meal in Japanprecisely ordered to both evoke the spirit and the taste buds. Masa is New York's classic/most expensive example. If you can afford Masa, you probably aren't searching the Internet for your dining news. You pay people to search the Internet for your dining news. Kajitsu, newly opened in the East Village, serves a version of kaiseki that's both wallet- and earthy-friendly vegan. Buddhist monks began the practice many years ago, as did chef Masato Nishiharawho worked for 10 years in kaiseki capital Koyoto, refining a menu that incorporates fresh vegetables, tofu and a glutton mixture called fu. Meals are priced at $45 (four courses) and $65 (seven courses), and served omakase-style.
