How's this for a stamp of eco-approval: The types of fish served at this sleek, 70-seat Japanese restaurant were selected with the help of the Marine Stewardship Council (an organization that certifies sustainable seafood sourcing) and the Monterey Bay Aquarium. Swim, fishies, swim! Former Charles frontman Cobi Levy is at the helm here, while Josh DeChellis (La Fonda del Sol) is onboard as partner and consulting chef. They've tapped Morimoto vet Hiro Sawatari to oversee the sushi menu, which offers both a la carte options as well as an omakase tasting menu. Composed dishes include braised halibut cheeks with clams, rice and collard greens, and grilled octopus with watermelon radish and kiwi.
