Let's consider this a Blanc slate: The onetime Bar Blanc Bistro space in the West Village has now been wiped clean in favor of this Southern spot. And although the cuisine hopped from France to South Carolina, the chef stayed more local: Former Bar Blanc sous-chef Will Sullivan was bumped up to exec chef at Lowcountry. Not a stretch: The guy lived in North and South Carolina for six years, and draws on his experience there to deliver a judicious menu of "refined comfort food," as he describes it. Shrimp and grits, baby backs, fried green tomatoesthey're all here. And not to be outdone by the whole fried chicken craze, they've got some of their own, too: Bell & Evans chickens marinated for 24 hours in buttermilk, mustard and Cajun spices, dredged in flour and cornmeal, and doused with pork-fat-infused gravy. Sullivan says they eventually hope to serve rotating weekly dinner deals like fried chicken night, fish-fry specials and a shellfish boil.
